As for Facebook, there aren't as many options. The best way to customize the look and feel of a Facebook account or Page is by uploading pictures, adding relevant applications, and creating content.
You can add customizable tabs to your facebook page and custom graphics can then go in there and you can also have an email opt in tab as well. There is a facebook app for installing an email opt in, it's not the greatest but will do for starting out (just search the applications)...then if you have an email service you use you can get the code from them and simply put it in the body of a custom tab so it integrates with your email program. THere is also an app you can install that integrates with a paid service so you can run sweepstakes and promotions on your page and track metrics but I haven't tried it yet.

I created a blog post with step by step instructions for adding a custom tab to your page. You can find my website on my profile and search my posts, there is a category for Facebook in the left margin, click that and you should find it right away.
You can also use a much larger image for your profile image on the page, 220 x 600 (again you can see mine as an example). Be aware sometimes Facebook is finicky about allowing the image to upload and will throw error messages that say the file is too big or words to that affect...I tried it first with a 200x600 jpg and it wouldn't work, changed it to a 200 x 600 png and it worked fine...this is an issue many have been posting about in some of Facebook's forums and seems to be some oddity with Facebook that just happens sometimes. Just keep trying over a few days or file formats and it should work. Some have also said they resized the image by just a tiny fraction (like 198 x 598 for example).
