how often should I redo my sitemap

First off, make sure you have at least two sitemaps. The xml sitemap is for the search engines and the html sitemap is for your website visitors. You might also consider an ror.xml sitemap as a 'wild card' for the second tier search engines, some of which don't recognize the xml sitemap.

If you add new content regularly, then updating your sitemaps once per month is not out of line. If you're not adding content and you're sure all pages have been indexed, then you don't need to update your sitemaps.
